PRODUCTION ZONE

The grapes for this Barolo come exclusively from the finest vineyard located in the community of Barolo.

CULTIVATION OF THE VINEYARD

Low Guyot system on hills with good inclines. The soils are of medium consistency with a substantial content of quartzose sand.

VINIFICATION

Soft pressing of the grapes harvested by hand with destalking, followed by fermentation in temperature-controlled tanks at 28-30 degrees C. (82-86° F.). The skins are macereted for 10 days and the wines is racked when fermentation has been completed.

MATURATION

This wine is maturated in Slavonian and French oak casks moderately tostated of 10, 20 and 30 hectoliters for three or four years. Afterwards, it is fined in the bottle for 18-24 months before being sent to the market. Laid down in a suitable place, the wine will keep for 25 to 30 years.

SENSORY CHARACTERISTICS

Garnet-red in color with ruby reflections. An intense odor with clean scents of roses, vanilla, licorice and spices. The flavor is full and elegant with good body and recurring olfactory sensation. the perfectly blanded goudron and hints of wood are extremely appealing.

FOOD MATCHES

With its big structure, this wine is particularly adapted to main courses of red meats, braised dishes and game in general. An ideal accompaniment for cheeses.

CELLARAGE

It is reccomended that the bottles be laid down in a cool, airy place protected from all sources of light and far from noises and vibrations.
